I hadn’t eaten Taco Soup since I was in high school and lived with my parents. It was one of those meals my mother used to make frequently, but I had forgotten about it! I realized after making this that I do not know how to make meals in small amounts and accidentally ended up making two crock pots full of delicious taco soup. Here is the recipe I came up with!
HOW TO MAKE DELICIOUS TACO SOUP FOR A CROWD
SUPPLIES
- 1-2 crockpots
- you may use a stockpot or large pot if you don’t have a crockpot
- frying pan
INGREDIENTS
- 1- 16 oz can of pinto beans
- 1- 16 oz can of white beans
- 1- 16 oz can of kidney beans
- 1 large onion of any variety- diced
- 2- 15 oz cans of whole kernel corn
- 1- 10 oz can of Rotel tomatoes and chilies
- 1- 28 oz can of diced tomatoes
- 2- 4 oz cans of diced green chilies
- 4 envelopes of spicy taco seasoning
- 2 envelopes of Hidden Valley ranch seasoning mix
- 3 lbs of hamburger
- Shredded mexican cheese blend (optional)
- Sour cream (optional)
DIRECTIONS
- Add beans, diced onion, corn, rotel tomatoes/chilies, diced tomato, diced chilies, 2 envelopes of taco seasoning and 2 envelopes of ranch seasoning to crockpot and cook on low for four hours
- Once the four hours has passed, brown hamburger in a frying pan, drain and cook with other two packets of taco seasoning as directed on package instructions
- Add seasoned hamburger to crockpot(s) and cook another four hours on low.
- When done cooking, add shredded mexican cheese (to your liking)
- Garnish with crushed tortilla chips (or you can keep your tortilla chips whole and dip them into the taco soup) and sour cream.
RECIPES NOTES
If you would like to make less, remove 1 can of kidney or white beans, only use 1 can of corn, 1 can of chilies, 2 envelopes of taco seasoning (1 for crockpot and 1 to season meat), 1 envelope of ranch seasoning and 1.5 lbs of hamburger.
